I love the 4th of July. Celebrating our countries birth is amazing! Each year I usually cookout, do some fireworks and make homemade ice cream. This year I did not make it to the ice cream. We had Gluten Free Strawberry Shortcake instead.
I also found out I am a weirdo. The “normal” person uses whipped cream on their strawberry shortcake. I do not, I use milk. I had no idea this was weird until recently. Shortcake is best all soggy with milk and with strawberries and sprinkled with sugar. It is DELICIOUS!
Baking Gluten Free delicious treats are one of my favorite things to do. There is very little I can not do Gluten Free. The 4th of July is always a fun time to flex my GF muscles in the kitchen.
Honestly, it is not that difficult to modify recipes to be GF. I found that a lot is easy especially with options like King Arthur Flour Gluten Free All-Purpose Baking Mix. Since Gluten causes more migraines for me along with a lot of digestion problems I stay away from it. My youngest also has a lot of issues that are flulike. I feel bad for her.
